<p>Objectives of the present invention is to solve a problem wherein a refining effect is degraded during frying oil passes a filter due to high temperature of the frying oil when the frying oil immediately enters a refiner at a temperature greater than 150°C and passes the refiner under high pressure, and to improve a weakness wherein great loss of the frying oil occurs due to increased rancidity and evaporation occurring when the high temperature is maintained during a process in which the frying oil is moved to a storage tank at the high-temperature state to be cooled. Provided is a hybrid apparatus for rapid-cooling frying oil by jetting cooling air and conducting refrigerant surface which includes a cubic body (100); a frying oil spirally-stacking type pipe (200); a cooling air jetting nozzle unit (300); and a refrigerant filling unit (400), such that the abnormality of each device may be checked in real time while monitoring each device on a screen by a monitoring server, operation of each device may be remotely controlled, and high-temperature frying oil may rapidly be cooled by primarily jetting cooling air and secondarily conducting refrigerant surface while guiding the high-temperature frying oil discharged from a fryer from an upper layer to a spiral structure at a lower layer, thereby improving 70% of a refining effect passing a filter compared with the conventional fryer, decreasing rancidity to 60% compared with the conventional fryer by making the frying oil be in a rapidly-cooled state even if moved to the storage tank in a post process, and decreasing evaporation rate to 70% compared with the conventional fryer to efficiently reduces oil loss.</p> |
