The present invention relates to a method for producing tagatose from fructose by adding hexokinase or fructokinase; fructose 1,6-bisphophate aldolase; and tagatose-6-phosphate phytase to fructose. The method for producing tagatose of the present invention, as a method for using a novel enzyme, is environmentally-friendly, uses a substrate having low unit price, and can maintain activity of an enzyme for a long time, thereby being effectively used for mass-producing tagatose. |
