The present invention provides a hydrocarbon oil production method that makes it possible to minimize the deactivation of a desulfurization catalyst. In a hydrocarbon oil production method according to one embodiment of the present invention, a mixed oil of atmospheric residue oil and solvent-deasphalted oil is brought into contact with a demetallization catalyst under the presence of hydrogen gas, and the mixed oil that has been subjected to demetallization is brought into contact with a desulfurization catalyst under the presence of hydrogen gas. The demetallization catalyst comprises a low-reactivity catalyst, and the proportion of a high-reactivity catalyst with respect to the entire demetallization catalyst is 0 vol% or more. One part of a metal component in the mixed oil is an easily decomposable metal component having a molecular weight of 3,000 or less as measured by GPC. The amount of vanadium in the easily decomposable metal component with respect to the amount of vanadium in all of a vanadium-containing compound is x%, and when the volume of the low-reactivity catalyst with respect to the entire demetallization catalyst is y vol%, the following inequalities hold true: 0 < x < 100; 0 < y ≤ 100; and x - 50 < y < 2.6x - 99. |
