Producing fatty acid esters of short-chain alcohols, comprises (i) subjecting plant oils or animal fats in the presence of enzymes to partial transesterification and hydrolyzing with aqueous aliphatic 1-6C alcohols, (ii) transesterifying or esterifying the reaction product with anhydrous aliphatic 1-6C alcohol, and (iii) re-using the excess alcohol separated from the step (ii) in the first reaction step without further purification.
