The process may comprise heating soya beans in the presence of emulsifying salt, grinding the beans and heating the flour in water. The soya flour may be partially or wholly defatted. Fruit, cucumber or tomato or flavours thereof or paprika may be present in the spread. The emulsifying salt may be an akali metal ortho- or poly-phosphate (e.g. pyro-, tri- or tetra-phosphate or Graham's salt) or alkali metal citrate. |
