Disclosed is a nutritional product comprising a fat system, wherein the fat system comprises at least 10 wt% of a mixture of an unsaturated free fatty acid component and fatty acid-containing monoglycerides, and wherein the nutritional product is selected from a liquid emulsion or a powder reconstitutable into a liquid emulsion.
