<P>PROBLEM TO BE SOLVED: To provide a stable emulsion composition which can be used as an aqueous solution of food pigments for coloring aqueous foods and drinks transparently and stably and to provide foods and drinks including the emulsion. <P>SOLUTION: The emulsion composition includes: (a) a fat-soluble component; (b) a sucrose fatty acid ester; (c) a polyglycerol fatty acid ester; (d) a phospholipid; (e) a polyol; and (f) water.
