A creaming mixture for use in the manufacture of cottage cheese and the like is prepared by incorporating comminuted cottage cheese curd in a milk derived fluid. The comminution may be effected by homogenizing the curd in the fluid. The creaming mixture is added to cottage cheese curd to give creamed cottage cheese. |
