摘要 The present invention relates to a method for preparing chicken breast for steak containing a grapefruit seed extract and a whey protein as active ingredients and, more specifically, to a method for preparing chicken breast for steak, wherein salty water containing a grapefruit seed extract and a whey protein is prepared, and the chicken breast for steak is salted by injecting the salty water two times and tumbling the salty water for 10 minutes. A chicken breast steak of the present invention is made by using chicken but not beef frequently used to cook steak, and thus has a superior competitive price, prevents heart disease and artery hardening since it has a higher protein content and lower fat content than beef, and promotes action of brain neurotransmitters due to abundant essential amino acids. In addition, the steak according to the method of the present invention is made by adding a grapefruit seed extract as a natural material, thereby having excellent sensory characteristics and quality, suppressing fat rancidity, harmful bacteria, and protein degradation, increasing juiciness and tenderness, and improving a flavor, and has a heart shape, thereby having excellent beauty quality.
