PROBLEM TO BE SOLVED: To provide a fried food and a production method thereof, hardly causing detachment or tear of a flour layer due to expansion or crimp of the flour layer during frying, so that even the unique and strong flavor of food material such as organ meat of livestock or poultry can be prevented from leaking outside the fried ingredient.SOLUTION: The fried food includes at least a fried ingredient and a flour for covering the fried ingredient. The fried ingredient includes organ meat of livestock and/or poultry. The flour is a grain flour including no gliadin and no glutenin, having a protein content less than 10 mass%. |
