The present invention relates to a method for preparing a water-soluble milk thistle extract, the method comprising the steps of: dissolving a milk thistle extract in alcohol and dissolving cyclodextrin in water; mixing the milk thistle extract-dissolved solution and the cyclodextrin-dissolved solution; lowering the concentration of alcohol in the mixture by stages; and encapsulating the milk thistle extract in cyclodextrin. According to the present invention, the preparation of the water-soluble milk thistle extract by the preparation method of the present invention can simplify the preparation process and provide a water-soluble milk thistle extract which has a reduced bitter taste, is stable against heat and pH, and has a high content of silymarin due to an increased recovery rate of silymarin. |
