摘要 The present invention relates to brown rice flour fermented with a fungus and a mushroom and a preparing method thereof and, more specifically, to brown rice flour which is fermented with fungi and mushrooms and is available as a new food ingredient to which nutritional and functional aspects are added, and to a preparing method thereof. According to the present invention, the preparing method for milling brown rice fermented with fungi and mushrooms comprises the steps of: (a) separating white rice and rice bran by milling brown rice; (b) fermenting the white rice with a fungus, and fermenting the rice bran with a mushroom; (c) mixing the fermented white rice and the fermented rice bran; (d) fermenting and ripening the mixture of the fermented white rice and the fermented rice bran; and (e) drying and grinding the fermented and ripened mixture of the white rice and the rice bran. According to the present invention, when the brown rice flour including white rice fermented with a fungus and rice bran fermented with a mushroom are kneaded, the volume and the specific volume increase. As a result, when the brown rice four is used as a food ingredient, the texture, such as hardness, cohesiveness, springiness, and chewiness is excellent. Also, the brown rice flour can be widely used for producing functional processed foods instead of wheat flour due to an immune stimulating activity.
