The assembly (10) comprises: a body (12) defining a duct (14) able to be passed through by a fluid flow; a piloted valve (16) defined in said duct (14) and capable of assuming a first configuration and a second configuration, wherein the piloted valve (16) is able to control the fluid flow in accordance with predetermined criteria; a pilot circuit (18) able to be run through by a portion of the fluid flowing in the duct (14); a pilot valve (20) capable of assuming a first condition and a second condition, wherein it controls the fluidic communication between the pilot circuit (18) and the duct (14), by switching the piloted valve (16) into the first configuration and, respectively into the second configuration; and an actuation member (22) associated with the pilot circuit (18), which is temperature-sensitive and is adapted to act upon the pilot valve (20) to switch it from the first condition to the second condition when the temperature of the fluid portion flowing in the pilot circuit (18) is above or below a predetermined threshold value.
