<p>The present invention relates to a preparation method of dried peach and dried peach prepared thereby. The shape of peach is maintained by firstly drying the peach as whole without cutting, turning over for secondly drying, and taking out seeds before thirdly drying. The dried peach has an excellent sensory evaluation result by dipping the dried peach in an osmotic solution containing sugar and water in a ratio of 1:2.5-1:3 (w/w) or oligosaccharides and water in a ratio of 1:0.5-1:1.5 (w/w), and mixed with 200-800 ppm (w/w) of vitamin C, and boiling. Accordingly, the present invention is anticipated to be practically used as a preserved peach preparation method replaceable to fresh peach.</p> |
