<P>PROBLEM TO BE SOLVED: To provide a substance which is not food additives, nor derived from animals, has low allergenicity, does not substantially affect on the taste or calories when added to food, and has functions of accelerating foaming of foam-containing food or stabilizing foam, and to provide a method thereof. <P>SOLUTION: The modifier for food-containing food is made of yeast extract which contains not less than 16% peptide, not less than 25% RNA, and not less than 20% dietary fiber. The method causes the food to contain 0.05-5% (w/w%) yeast extract, and accelerates foaming of the food or improves stability of the foam. <P>COPYRIGHT: (C)2012,JPO&INPIT |
