<P>PROBLEM TO BE SOLVED: To provide an acidic oil-in-water emulsified composition which has, in addition to low-temperature resistance, high stability to the pressure shear and temperature change repeatedly generated during use, and contains diacylglycerol at a high concentration. <P>SOLUTION: The acidic oil-in-water type emulsified composition contains the following (A), (B), and (C): (A) oil-and-fat containing 20 mass% or more of diacylglycerol, in which 80 mass% or more of a fatty acid that composes the diacylglycerol is an unsaturated fatty acid; (B) polyglycerol fatty acid ester, in which 50 mass% or more of fatty acid that composes the polyglycerol fatty acid ester is a saturated fatty acid of carbon number 14-18, and an average polymerization degree of a glycerol is 20 or more; and (C) yolk. <P>COPYRIGHT: (C)2012,JPO&INPIT |
