The present invention relates to a method for producing high purity and high yield water-soluble beta-glucan from barley. In the method of the present invention, barely powder is heated with hydrogen peroxide, so that the extraction yield is increased and a beta-glucanase is simultaneously inactivated. To prevent the additional decomposition of beta-glucan caused by hydrogen peroxide, catalase and phytic acid are added as hydrogen peroxide inhibitors. To remove residual polysaccharides and oligo saccharides, an alpha-amylase treatment is performed. By means of the method of the present invention, high purity and high yield water-soluble beta-glucan can be produced. |
