<p>The present invention relates to noodles using fermented unpolished rice, and more specifically, to noodles using fermented unpolished rice, the noodles comprising powder of fermented unpolished rice fermenting rice bran powder in which embryo bud of rice and rice bran are mixed; rice powder; alpha rice powder; water; and white salt. The noodles using fermented unpolished rice consists of 10-20 parts by weight of rice powder; 10-20 parts by powder of alpha rice powder; 30-40 parts by weight of water; and 0.5-1.0 parts by weight of white salt based on 100 parts by weight of powder of fermented unpolished rice. The noodles using fermented unpolished rice of the present invention has chewy texture, and plain and savory taste, thereby being manufactured as noodles of various thickness such as normal noodles, noodles with black soybean sauce, spaghetti, cold noodles, etc. Powder of fermented unpolished rice made by fermenting rice bran powder in which embryo bud of rice and rice bran are mixed can be provided at lower cost than existing unpolished (brown) rice powder, thereby having an excellent competitive price compared with that of flour.</p> |
