PROBLEM TO BE SOLVED: To heat as necessary in-refrigerator food while preventing the food from being dried in company with heating, and also to solve problem of dew condensation incidental to supply of steam.SOLUTION: This is a method of heating food kept cold in a refrigerator of a food service wagon or the like. The method includes: a heating step in which steam is supplied increasingly stepwise while food kept cold in a refrigerator is heated; and a cooling-down step in which, after the refrigerator is maintained in a prescribed highest temperature range inside for a prescribed time in the final period of the heating step, heating for the food is stopped to supply the steam only continuously for a prescribed time. |
