The present invention relates to a method for manufacturing citron snack comprising: a step for washing ripe citron peel and cutting into even slices; a step for removing a unique sour taste of the citron by sonicating the citron peel slices at 1-5 W/cm^2 for 10-30 minutes; a step for adding a flavor of seasoning to the citron peel by dipping the citron peel of which the sour taste is removed in the seasoning prepared by mixing a functional additive comprising taurine, water soluble vitamins, and organic acid, salt, and xylitol with a natural coloring solution for a period of time; and a step for taking the citron peel slices out of the seasoning and draining, and then freeze drying. According to the present invention, the natural coloring solution and functional additive enhance nutrients in citron, the initial shape is maintained by freeze drying in a solid state, and the citron snack is processed in a vacuum, thereby preventing oxidation or bacterial contamination due to exposure to air and being easy to carry. |
