摘要 The present invention provides citron mayonnaise with improved preservability and flavor by containing 3-20 w% of citron juice per total weight of the mayonnaise. The citron mayonnaise according to the present invention has excellent effects on enhancement of the taste, scent, and palatability, and as well as on improvement of the preservability by increasing viscosity and preventing the separation of oil and acidification of fat. Accordingly, the citron juice can be effectively used as a natural ingredient which can be substituted for an antioxidant and an emulsion stabilizer used for mayonnaise, and has preventive effects against obesity, diabetes, aging, and cancer due to vitamins and minerals in the citron.
