<p>The invention relates to the liqueur industry, namely to a process for producing aromatic extract from acacia flowers.The process, according to the invention, provides for the collection, optionally drying and grinding of flowers, mixing thereof with water, addition of diastatic enzymes, heating of the mixture and maintenance to complete destruction of glycosides and dextrins, administration of liquid brewer's yeast and fermentation of the mixture, addition of rectified ethyl alcohol into the fermented mass and maceration in two stages, drainage of obtained extracts, pressing of flower mass and unification of obtained extracts.The result consists in increasing the aromatic substance extraction efficiency.</p> |
