The present invention relates to a method for extracting soluble GABA substance from sprouted brown rice and to a composite using the same. The method according to an embodiment of the present invention, which is for extracting soluble GABA substance from sprouted brown rice, includes the steps of: extracting soluble sprouted brown rice extract; fermenting the extracted soluble sprouted brown rice extract; cooling the extract at a rapid rate and stopping the extract from being activated; extracting a first purified fluid from the extract; extracting a second purified fluid from the first purified fluid; extracting a purified GABA fluid from the second purified fluid; and extracting purified GABA powder from the purified GABA fluid.
