摘要 <p>PROBLEM TO BE SOLVED: To inexpensively bake fluffy bread having good taste and texture which does not use chemical substance-containing yeast at all but uses natural materials and natural yeast to avoid harmful influence on the human body.SOLUTION: A bread production method includes: mixing wheat flour with water and fermenting the mixture using a fermentation product of soy beans and enzymes of wheat flour to prepare sponge dough; adding strong flour, granulated sugar, salt and the like to the sponge dough and kneading them to perform main mixing; adding butter and water to the dough having been subjected to the main mixing, mixing them, further adding dry mix fruit, cut orange, an orange liqueur, and juice and grated peel of orange thereto, mixing them, and fermenting the mixed dough for a long time; putting the fermented dough into a paper mold and fermenting it for a short time; whipping egg white, an almond powder, powdered sugar and the like and putting the whipped mixture on the fermented dough; and putting the dough into an oven to bake it.</p>
