PROBLEM TO BE SOLVED: To provide a noodle boiling machine capable of boiling noodles while suitably keeping the texture thereof regardless of the experience or skill of a cooker.SOLUTION: A noodle boiling machine includes: a hot water tank 21; a heating chamber having a heating burner for heating the bottom surface of the hot water tank 21 to generate bubbles therefrom; and an exhaust cylinder communicating with the heating chamber for releasing the discharged heating gas of the heating burner to the outside. The hot water tank 21 includes: a first boiling region R1 having circulatory convection C in which the hot water circulates in the vertical direction H to briefly boil noodles; and a second boiling region R2 having bubbles B2 formed above the hot water surface of the hot water tank 21 to wrap the briefly boiled noodles to finish boiling the noodles.
