The present invention consists in the use of crustaceous wastes for obtaining chitin by means of the deproteinization with proteases. The wastes were previously treated with a buffer phosphorus solution and a potassium chloride solution for removing the sarcoplasmic and microfibrillar protein, this being subsequently demineralized with a solution of hydrochloric acid. During the treatment for removing the sarcoplasmic and microfibrillar protein, an 82% of deproteinization was obtained.
