The present invention relates to a fermentation apparatus using hot and cold water, which can produce fermented food such as meju (a brick of dried fermented soybeans), germinated grains, and cheonggukjang (fermented soybean paste) in a large amount. For this, the fermentation apparatus includes: a container which is made of an insulation wall body, includes a vent hole for air circulation from the outside, and is opened and closed by a door; a heating means for increasing the temperature of the inside of the container by using hot water; a cooling means for decreasing the temperature of the inside of the container by using cold water; a humidifying means for humidifying the inside of the container; and a controller for controlling the temperature of the inside of the container to be a predetermined temperature by controlling flow of the hot water and the cold water. |
