PROBLEM TO BE SOLVED: To provide a freeze dry system and a freeze dry method, capable of improving cleanliness and production efficiency with a simple system constitution.SOLUTION: A freeze dry system performing freeze dry by sublimating moisture frozen by cooling an object includes: a cooling device 3 having an air cycle for generating cold heat; a freeze dry chamber 2 storing a heat exchange unit for performing heat exchange between a coolant and an object; and a control unit 11 controlling cooling performance of the cooling device. The control unit adjusts a temperature in the freeze dry chamber to a predetermined target temperature by controlling a generation amount of cold heat in the cooling device.
