摘要 <p>The present invention relates to a manufacturing method of sweet potato easy to carry, which maintains the taste and nutrition of sweet potato so as to allow to take sweet potato throughout the year. The manufacturing method of the present invention comprises a step of cutting washed sweet potato into the rectangular parallelepiped and precipitating in brine; a step of taking out the precipitated sweet potato from brine, removing water and steaming in a steam pot for 25-35 minutes; a step of baking the steamed sweet potato in an oven at 95-100°C for 60-90 minutes; a step of drying the sweet potato in the oven at a lowered temperature of 70-80°C for 25-35 minutes; a step of re-drying the dried sweet potato in a dryer at 30-40°C for 35-45 minutes; a step of battering the dried sweet potato and deep-frying; and a step of rapidly cooling the deep-fried sweet potato at -45 to -35°C.</p>
