<p>The present invention relates to a device (1) for sterilising and pasteurising products (2) in a sealed packaging (3) having a flexible portion (4), comprising an enclosure (100) provided with a mounting (5) for said products (2), means (6) for managing the internal pressure inside said enclosure (100), characterised in that said device includes a station (7) for monitoring the slightest deformation of said flexible portion (4) of a packaging (3), including a sensor (8), shaped such as to rest in contact with said flexible portion (4), said sensor (8) including a mobile portion (80) and means (9) for measuring the movement of said mobile portion (80), and said measurement means (9) are connected to said management means (6), such as to communicate the measurement of said movement of said sensor (8) to means (12) for processing said measurement in a variable for controlling the increase or the reduction of said internal pressure.</p> |
