The system comprises: - dispensing means that include a needle (1) through the point of which a substance in solution (P) is dispensed, by electrospinning; - a collector (3) for receiving the substance dispensed via the needle (1), once solidified, forming fibres (Pt); - and means for supplying solvent that comprise a container (2) for solvent in the liquid state (Ls) arranged close to the point of the needle (1) for supplying solvent in the gaseous state (Gs) to the outlet environment thereof, including the zone of the Taylor cone (Ct), by means of the evaporation of the solvent in the liquid state (Ls). The method comprises supplying solvent in the gaseous state (Gs) to the outlet environment of the point of the needle (1) by means of localized evaporation in the vicinity of the zone of creation of the Taylor cone (Ct) of a solvent in the liquid state (Ls).
