An installation for preparing a brine suspension for injecting into meat comprises the following invention: members for freezing down the cut-off products, members for mincing the froze cut-off products, members for cooling the brine, members for mixing the cooled brine and the minced, frozen cut-off products, members for suspending the resulting mixture, while at the same time comminuting it, which members for suspending comprise at least two vessels 2, 3 for alternately temporarily storing the mixture/suspension during the suspension process, and also a comminuter 4, via which the mixture/suspension is conveyed from the one vessel to the other, and also members 13 for injecting the completed suspension. Because the members for cooling the brine are arranged to cool the brine down to a temperature at which ice crystals are formed in the brine, a thermal buffering effect is achieved during the suspension process such that the latter can be terminated at a temperature which is lower than -10 degrees C. This makes it possible to prevent the collagen fibres from clotting. The admixture of air in the suspension is avoided by additionally placing the temporary storage vessels and the comminuter under vacuum during the suspension process. <IMAGE> |
