PROBLEM TO BE SOLVED: To provide an acidic oil-in-water type emulsified oil and fat composition (such as a mayonnaise and a dressing) capable of maintaining properties as a mayonnaise without causing demulsification even if frozen to -28°C or lower at low cost.SOLUTION: There is provided an acidic oil-in-water type emulsified oil and fat composition having an oil and fat content of 25 to 80 wt.%, which contains 30 to 100 wt.% of liquid oils and fats derived from palm oil containing 10 to 30 wt.% of glycerides obtained by using a palm-based oil and fat as a main raw material and in which the SU2/UUU weight ratio is 1.9 or less, the SSS content is 2 wt.% or less and palmitic acid is linked at the 2-position in the total oil and fat of the acid oil-in-water type emulsified oil and fat composition. |
