The present invention relates to morning bread containing citrus peel, a breakfast substitute, and to a method for manufacturing the same. More specifically, the present invention relates to a method for manufacturing morning bread containing citrus peel as a breakfast substitute comprising a step for mixing citrus peel, strong flour, sugar, salt, condensed milk, milk, baker′s yeast, and drinking water using a mixer at low speed until the dough holds together; a step for adding 7-8 w/w% of butter to the dough and mixing at low speed for 2 minutes, and then developing gluten at medium speed for 10 minutes; a step for fermenting the finished dough in a fermentation room under a relative humidity of 75% at 27°C for 90 minutes; a step for shaping the fermented dough and then secondarily fermenting under a relative humidity of 80% at 38°C for 30 minutes; and a step for baking the secondarily fermented dough in an oven at 210°C for 35 minutes. The bread of the present invention contains functional ingredients, thereby being beneficial to health. |
