摘要 PROBLEM TO BE SOLVED: To improve the durability of sharpness life by using a plate-shaped sintered body obtained by processing a zirconia ceramic or a titanium alloy by powder metallurgy as a material, forming the rear side of an edge on a bent sintered side, and the surface on a ground side that intersects with the bent sintered side at the tip, and forming a double-sided cutting edge of both sides. SOLUTION: A kitchen knife, the side portion 1 of which is about 2 mm in thickness, for example, is manufactured by processing a zirconia ceramic or a titanium alloy by powder metallurgy. The rear side of the edge portion 2 of the kitchen knife is formed in a bent sintered side d-c continuing to the rear side of the side portion 1 and bending in the direction of thickness decreasing. The surface of the edge portion 2 continues to the surface sintered side of the side portion 1, is formed into a ground side b-c crossing the bent sintered side d-c, and forms a double-sided cutting edge with the bent sintered side d-c. The anglesα,βof the cutting edges are made about 10 deg. and 8 deg. respectively, and the angle of bending of the bent sintered side d-c is made about 10 deg.. Thus the sharpness at the initial time can be maintained.
