The present invention relates to a method for manufacturing functional kimchi and functional kimchi manufactured thereby and, more specifically, to a method for manufacturing functional kimchi, extending the shelf life of the kimchi and having antimicrobial activity by delaying the aging of the kimchi using nanosilver particles (or silver ions) and the functional kimchi manufactured thereby. The present invention provides a method for manufacturing functional kimchi comprising a process of washing and salting raw ingredients of kimchi, a process of making silver water, a process of making kimchi seasoning, a process of making a kimchi seasoning sauce by mixing the kimchi seasoning with the silver water, and a process of mixing the kimchi seasoning sauce with the raw ingredients of kimchi. Additionally, the present invention provides a method for manufacturing functional kimchi characterized by the silver water with 4-20 ppm of silver ion. Also the present invention relates to a method for manufacturing functional kimchi, characterized by the kimchi seasoning sauce prepared by mixing 1-2 parts by weight of the silver water with 1000 parts by weight of the kimchi seasoning. Also, the present invention provides the functional kimchi manufactured by the method for manufacturing the functional kimchi. |
