The present invention provides a high-protein food using meat and a method for preparing the same, wherein the method comprises: step S11 of putting 530-570 g of meat, 325-340 g of a vegetable type meat tenderizer, 23-28 g of an enzyme, and 20-22 l of water in a container, and heating the mixture until the texture of the meat is loosened like threads; step S12 of filtering out the contents when the meat is loosened like threads, and extracting a solution therefrom; step S13 of heating the extracted solution over low heat to concentrate the extracted solution; and step S14 of pouring the concentrate in a frame with a predetermined size, followed by cooling. According to the high-protein food using meat and the method for preparing the same of the present invention, a smooth pudding type solid is prepared by heating the meat, and thus the high-protein food of the present invention can be easily eaten by the elderly and infirm, patient after surgery, or patients with diseases, can raise the protein uptake, and can be easily digested. Furthermore, the high-protein food of the present invention is used as a nourishing food or a fitness supplement, which is prepared to supply nutrition to the elderly and firm, promptly recover the health of patients, and adjust physical conditions of healthy persons, and thus has improved marketability. Furthermore, the high-protein food of the present invention is maintained at a solid phase even at room temperature, and thus can be easily conveyed and stored. |
