摘要 PROBLEM TO BE SOLVED: To provide a method of manufacturing a noodle capable of imparting a food texture which is equal to or better than the case of using high price hydroxypropyl starch even when using acetylated starch low in a production cost for a noodle using a brine such as a Chinese noodle, and a noodle manufactured by the method.SOLUTION: The noodle is manufactured by blending 100 pts.mass of a total amount of a cereal flour and starch containing in a noodle raw material, and 1.8-3.0 pts.mass of a brine using the noodle raw material containing acetylated starch. A raw material starch of the acetylated starch is preferably tapioca starch.
