<p>The present invention provides a process for manufacturing a food product based on crabs, as well as the product itself. The process includes mixing commercial surimi, crab extract, egg whites, edible vegetable fiber, wheat flour, modified starch of potato and seasoning, until forming an homogeneous paste; adding vegetable oil and homogenizing at a temperature lower than 5°C; introducing the resulting paste into stainless steel tubes; subjecting the tubes to Bain Marie at 80°C until reaching an inner temperature of 72°C for 15 minutes; and tempering to 20°C for being stored.</p> |
