<P>PROBLEM TO BE SOLVED: To provide a whey protein-containing nutrient composition withstanding a homogenizing treatment or a heat sterilizing treatment in a production process, ensuring emulsion stability even after preparation, having homogeneous contents ingredient and a good flavor and ingestible during feeding to the aged, patients etc., requiring the feeding by combining specific emulsifying agents and carrying out emulsification even when a whey protein is formulated. <P>SOLUTION: The whey protein-containing nutrient composition comprises the whey protein. The whey protein-containing nutrient composition comprises following (A) and (B) as the emulsifying agents, uses the emulsifying agent (B) in an amount of 0.5-3 pts.wt. based on 1 pt.wt. of the (A) and is liquid after heat sterilization. (A) one or more organic acid monoglycerides selected from among the group consisting of succinic acid glycerol monostearate, lactic acid glycerol monostearate, and diacetyltartaric acid glycerol monostearate, and (B) a polyglycerol fatty acid ester having 12-14 value of HLB and ≤60°C melting point of fatty acids composing the emulsifying agent. <P>COPYRIGHT: (C)2009,JPO&INPIT |
