The present invention relates to a convenient fresh-cut fruit coating composition with improved storage and freezing and thawing properties, which is manufactured by mixing sugar, pectin, alginic acid, carrageenan, xanthan gum, and vitamin C in a proper ratio, and to a method for manufacturing the same. The fresh-cut fruit coating composition of the present invention has high sugar content, high viscosity, and low acidity, thereby improving the flavor of a fresh-cut fruit and improving storage properties. Moreover, the composition has the freezing and thawing stability by uniformly maintaining the sugar content, pH, and color after repeated freezing and thawing processes. Therefore, if the fresh-cut fruit coating agent is coated on a fresh-cut fruit, the fresh-cut fruit can be preserved at low temperature for a long time and the storage properties of the fruit is improved, so that the shelf life of such a cake including the fresh-cut fruit can be extended. |
