The manufacturing method of the garlic ssamjang including dietary fibers comprises a garlic aging process (100) including the steps of selecting garlic; peeling the garlic; removing foreign materials like soil and inedible parts from the garlic; washing the garlic; and aging the garlic in vinegar for 100 days.</p>
