1. A process for producing poly-γ-glutamic acid, comprising:
(a) preculturing Bacillus megaterium WH320 in a first culture medium having a sodium chloride concentration of 0.05% by mass or less; (b) cultivating the Bacillus megaterium WH320 in a second culture medium having a high sodium chloride concentration of 1.5% by mass or more; and (c) recovering from the second culture medium the poly-γ-glutamic acid released by the Bacillus megaterium WH320, wherein the poly-γ-glutamic acid comprises 90% or more L-glutamic acid. |
