<p>PROBLEM TO BE SOLVED: To provide a crouton for vegetable salad, excellent in appearance and quality such as texture and taste, suitable for industrial production.SOLUTION: The crouton is produced by the successive steps of: producing a white bread having a thickness of 8 to 24 mm after baking; cooling the white bread; and cutting the white bread to be dehydrated by heat. The crouton includes heels of bread on opposite faces, having a specific volume of 2 to 4 ml/g.</p> |
