<p>Disclosed is a method for preparing a five-colored fermented sauce using medicinal herbs, whereby five colors can be displayed on food or the like by using natural materials instead of artificial pigments. For this, the present invention provides a method for preparing a five-colored fermented sauce using medicinal herbs, comprising: a medicinal herb selecting step of selecting medicinal herbs for expressing target colors; a mixture forming step of adding sugar to the selected medicinal herbs to form a medicinal herb mixture; a dissolving step of storing the medicinal herb mixture at room temperature, thereby dissolving sugar with the medicinal herb mixture; a fermenting step of fermenting the medicinal herb mixture having the dissolved sugar to express target colors; and a filtering step of removing medicinal herb solids from the medicinal herb mixture. The fermented sauce of the present invention can apply five colors, which exhibit respective energies of five elements, to food, thereby providing visual and psychological stability. Further, the fermented sauce of the present invention is more useful than a five-colored sauce realized by simple artificial pigments in terms of a nutritional aspect.</p> |
