PROBLEM TO BE SOLVED: To provide a manufacturing method of miso pickles with use of mushrooms, capable of utilizing miso pickling paste without waste, allowing overheated meat and seafood to be softened or hardly hardened, incorporating the rich taste into meat and seafood.SOLUTION: The method includes the steps of: heat treating the mushrooms: cooling the heat treated mushrooms by leaving the mushrooms in a state to be dehydrated and dried; stacking and immersing a part of the mushrooms for use as seasoning in a seasoning mainly composed of miso; and stacking and immersing raw meat or seafood in the seasoning mainly composed of miso with the mushrooms being removed, in a sandwich form. |
