One proposes the application of an apple extract containing polyphenols for the manufacture of a complete nutritional composition for the reduction of symptoms of allergy caused by food in patients suffering from allergy caused by food allergens. The apple extract is enriched with polyphenols by at least 1.5 times relative to the unpurified apple extract.
