摘要 <p>The present invention relates to a manufacturing method of allium hookeri rice noodle, the method comprising the steps of separating leaves and roots from allium hookeri; manufacturing allium hookeri leaf powders by drying the separated allium hookeri leaves; manufacturing allium hookeri root powders by drying the separated allium hookeri roots; manufacturing an extract solution of allium hookeri root by boiling the allium hookeri root powder with water; kneading noodle materials, consisting of 90-97 parts by weight of rice powders, 1-10 parts by weight of starch and 2-5 parts by weight of the manufactured allium hookeri leaf powder, and 33-37 parts by weight of mixing water for 100 parts by weight of the noodle material and then making the same gelatinization; molding the rice noodle whose size is between 2.6×0.6mm and 3.4×1.0mm by molding the kneading; pre-drying the rice noodle between 65~75°C, at 20% of relative humidity for 3-5 minutes; and drying the pre-dried rice noodle between 45-60°C at 40% of relative humidity for 60 minutes wherein the mixing water comprises 0.05-5 parts by weight of purified salt; 0.3-5 parts by weight of the extract of allium hookeri root manufactured in a process of manufacturing extracts of the allium hookeri root; 0.5-5 parts by weight of rice bran flavor solution; and purified water.</p>
