Provided is a sweet potato syrup which is made from sweet potato, which is freed from an unpleasant taste due to malt or an odor due to malt and exhibits improved taste and flavor, and which is useful as a dietary supplement that permits the setting of a prolonged best-before period or a prolonged shelf life and that has a high-grade feeling with emphasis on nutritional functions. A process for producing a sweet potato syrup which comprises: adding, as a saccharification enzyme, &bgr;-amylase contained in a squeezed juice or powder of sweet potato to a sweet-potato-derived raw material which is obtained by adding water to sweet potato and subjecting the mixture to heat treatment; and subjecting the resulting mixture to saccharification by heat treatment at 60 to 75ºC for 30 to 60 minutes. |
