Provided are a honeycomb sandwich structure and a production method for honeycomb sandwich structure, whereby in a honeycomb sandwich structure constituted by a honeycomb core and a surface material made of fiber-reinforced plastic, there is adopted a structure in which an optical fiber sensor structure is embedded within an adhesive layer formed between the surface material and the honeycomb core, whereby even in cases in which a thermal control element has been bonded to the surface, thermal control can be executed properly, and temperature can be evaluated with high resolution and high accuracy.
